Prawns are undoubtedly a very popular shellfish and these crustaceans are considered a super-food. High in protein and low in calories and fat they are one of the recommended foods by the British Heart Foundation. Most Tiger Prawns sold in the UK, and indeed the world, are farmed in South East Asia, using techniques that are known to damage the surrounding wildlife environment, with working conditions that have been subject to heavy criticism. As a sustainable alternative to Farmed Imported Tiger Prawns, we have at last discovered a superb wild red tiger prawn fishery in the cool waters of the South Atlantic. Well managed by the local fishing community, with no-catch zones in the spawning areas and quotas carefully controlled to ensure the sustainability of the species. When available we also source from some true innovators who are farming King Prawns in the UK. This is an incredible development, and although not available right now, they should be back on soon, and this represents the very best of sustainable aquaculture.
