A whole salmon can make a wonderful centrepiece for a special meal, and will easily cater for 10 people plus! We recommend roasting it in the oven, on a bed of fennel, red onion and peppers. Stuff the cavity with lemon, freshly chopped parsley, tarragon and dill. Score each side 5 or 6 times, and on both sides rub in lemon juice and herbs, season with salt and pepper, and drizzle with olive oil. Then treat it like a chicken, roasting on high heat for 15 minutes before lowering the temperature to 180 degrees for another 60-70 minutes.
