John Dory belongs to the aptly-named ‘Zeus’ genus of fish species, which is in keeping with its other-worldly appearance of bizarre fins and spikes.

Also called the St Peter Fish it has a mottled yellow body and can grow up to 5kgs in weight.

A top-quality fish that should not be overcooked, John Dory boasts dense white flesh with lots of flavour and is well suited to Mediterranean recipes, many of which involve baking.

Try it slow-roasted with cherry tomatoes and wild garlic pesto for a real treat.

Storage & Preparation 

Fresh fish is best eaten straight away, or within 3 days.

In some cases, this product may be dispatched frozen and begin to defrost in transit. Therefore might not be suitable for home freezing.

Store in your refrigerator and pack with ice if possible.

To freeze; place the fish straight in the freezer upon delivery and aim to consume within 3 months.

TIP: Write the date on the packaging before freezing.

Do not re-freeze your fish after defrosting.
