John Dory is simply delicious. It has a firm texture and a sweet and light flavour, and is very versatile when it comes to cooking. Fillets can be chargrilled, roasted or panfried and work well with a variety of flavours. One of our favourite dishes is grilled Dory fillets served with olives, capers and rosemary and crispy salted potatoes on the side.
