John Dory is a quite beautiful fish that can be found from the Canaries to Scotland. It is also known as St Peter's Fish, with the distinctive black splodges on either side said to be the thumb and forefinger print of St Peter himself. It is a relatively abundant species in Cornwall, and as well as looking stunning, it is delicious too. It has quite a firm texture and sweet flavour.
We source good sized fish of about 1 kg, and you can choose to have them whole scaled and gutted, or filleted, depending on your preference. Each fish will be enough for 2-3 main course portions or 4-6 starters.

  • We source large dayboat fish from Newlyn, Looe and Plymouth
  • Relatively abundant species in Cornwall, although more information is required on stock levels, we only offer larger fish
  • Excellent source of Omega 3 oils and packed with essential vitamins and minerals
  • We recommend cooking fillets skin on, and it is robust enough to chargrill

John Dory is simply delicious. It has a firm texture and a sweet and light flavour, and is very versatile when it comes to cooking. Fillets can be chargrilled, roasted or panfried and work well with a variety of flavours. One of our favourite dishes is grilled Dory fillets served with olives, capers and rosemary and crispy salted potatoes on the side.
