Preparation

Dover sole is the 'king' among smaller flat fish. It is delicious, easy to cook and sustainable. It does fetch a hefty premium over other soles due to the high demand it garners. As a special treat we think it is absolutely worth it! Traditionally it is cooked on the bone, but it works very well off the bone too. We can prepare the whole fish to suit your dish, either whole or pan-ready, with dark skin on or off depending on your taste. One whole fish is enough for a sharing starter for 2 or a generous main course for 1.

* One of the finest flat fish landed in the UK and an excellent source of Omega 3 oils with 644 mg per 100g of edible fish and packed with minerals and vitamins
* Delicious when started in the pan to caramalise the dark side, and finished off roasting in the oven

Storage & Preparation

Fresh fish is best eaten straight away, or within 3 days.

In some cases, this product may be dispatched frozen and begin to defrost in transit. Therefore might not be suitable for home freezing.

Store in your refrigerator and pack with ice if possible.

To freeze; place the fish straight in the freezer upon delivery and aim to consume within 3 months.

TIP: Write the date on the packaging before freezing.

Do not re-freeze your fish after defrosting.
