Monkfish is a very firm fish, as there is only one bone running down the centre of the body. That makes it robust and a great addition to a stew or a curry. It also works very well on the BBQ and can even be cooked on the bone similarly to a shoulder of lamb. One Chef we know coats a skinless tail with a curry paste, and then roasts and carves it like a joint.
