Herring Rollmops
why?
A wonderfully traditional way to enjoy one of the most important species landed on our shores, these fabulous hand-rolled marinated rollmops come to us courtesy of the Orkney Food Company where tonnes of the ‘silver darlings’ are landed every season. Silvery, sweet and, above all, sustainable, these mouth-watering morsels are brimming with flavour, as well as Omega-3.
The humble Herring, and in particular the Pickled Herring in its many forms has been a staple in Northern Europe since medieval times, being an ingenious way to store and transport fish before refrigeration. Because herring was a fatty fish, it had to be cured as quickly as possible to prevent it rotting, it was then packed in barrels for storage or transportation. The development of the long-range railway network in Europe allowed for the transport of herring from the North and Baltic seas to the interior and demand increased rapidly. Indeed, during the ’Herring Boom’ of 1907, there were as many as 30,000 vessels involved in herring fishing the East Coast, not to mention others in the Irish Sea. As the century progressed, the numbers continued to grow until the Scottish fishing industry became the largest in Europe.
The term ‘Rollmop’ comes from the German phrase for ‘small fat lad’ encapsulating the plump innocence of the perfect herring fillet with its cache of onions and peppercorns, all afloat and waiting to be plucked from the brine. Still incredibly popular, nowadays rollmops are commonly served as part of the German Katerfrühstück (hangover breakfast) which is believed to restore your missing electrolytes post-Oktoberfest!
