Pollack has in the past suffered from a let's just say a poor reputation. But the tide is turning as more and more people are trying it for themselves and deciding it is a delicious fish worthy of even the very finest restaurants! The fishermen around Cornwall have known how good it is for a long time and they treat it with the respect it deserves - gutted, washed and put in slush ice immediately.
It is often line-caught and is one of the most sustainable species of white fish available. It is landed in large quantities pretty much year round here in Cornwall.
It is a stunning fish too and we often get them with a bright greeny bronze shine to the skin and so fresh they still have rigor. It should be viewed as a genuine alternative to cod and if you have never tried it we thoroughly recommend that you do!
