We source our wild king scallops only from small inshore day boats. Although they use dredges, the scale of the equipment on these smaller boats means that they cause less damage to the seabed than larger boats. They also rotate their fishing grounds carefully to allow each area to recover.
For something so small they are incredibly strong and they propel themselves by using jets of water and opening and closing their shells. Their unique texture is a result of them being one huge muscle - the white disc of meat that is eaten is pure muscle.
Unlike many suppliers we also only offer dry natural scallops, and never soak ours.
Occasionally if fishing is poor in Cornwall we do source these from similar boats in Scotland.
