Red Mullet is back on the menu! These distinctively pink-orange fish have landed in Plymouth and Brixham markets by small day boats and are available to buy whole or fillets. The fine white meat is perfect for pan-frying, oven roasting or serving crispy from the BBQ on a glorious summer's day. Due to the sporadic nature of red mullet (it is unpredictable in its shoaling and movements), we source it when it is plentiful and freeze it to ensure stocks are sustained for a little longer. Freezing is nature's best preservative, so none of the rich, deep flavour or unique texture will be lost. Our red mullets are caught by gill nets only - a fishing method recommended by the Cornwall Good Seafood Guide as there is no damage to the seabed and its delicate ecosystems. We scale, fillet and pinbone the fish by hand, before packing and blast freezing. **In each pack you will receive 300g of Fillet - enough for 2 main course portions - Supplied frozen**
