The quality of the Trout produced at ChalkStream® is directly related to the quality of the water and the high flow rates of the farms, described thus by Simon Cooper of 'The Field' (author of Life of a Chalkstream) “Each winter, the rain falls high on the sheep-grazed downs then seeps into the chalk seam hundreds of feet below the ground. Filtered, purified and chilled, the water emerges months later to form such famous rivers as the Test and Itchen. The closest thing to heaven on earth for rearing trout.”
Similar to terroir in wine, it is the pure chalkstream water that gives an exceptionally lean, athletic fish with a unique fresh, clean taste. Slow-grown over 2 years in the same conditions as a wild trout from the Test and Itchen, ChalkStream® produce firm, well-muscled, large trout low in fat.
ChalkStream® farms are fully segregated systems, minimising the impact on the unique chalk stream environments of the main rivers. The outflow from the farms passes through specially designed settling channels to remove waste and ensure the water returns to the river in the same class A rated condition. The Test and Itchen Rivers are two of the most highly monitored rivers in the UK and the farm outflows are subject to a constant testing regime by the Environment Agency to ensure water quality. In contrast to sea cage and loch reared fish, ChalkStream® has a proven low impact on the surrounding water environment. Perfect!

How much weight do Live Lobsters lose when cooked?
The Lobster weight listed on our shop are 'live' weight. All Lobsters lose a small amount of weight once cooked. The general guideline would be:
10-15% loss for a Cooked Lobster
15-20% loss for a Cooked, Split and Cleaned Lobster
What to expect when you purchase a Lobster
Delicious White Meat - this can be found in the tail and claws of the Lobster
Tomalley - this is the soft green, red or black substance which is found in the body cavity of Lobsters that fulfills the function of both the liver and pancreas.
It is perfectly safe to eat and is often considered a delicacy. It may be eaten alone or used in sauces for flavour and as a natural thickening agent.
Normally this is within 48 hours (taking into account that we deliver Tuesday to Saturday). This allows us time to source, prepare, dispatch and deliver your order to you.
For example, if you place an order Monday, we can deliver Wednesday. Place an order on Friday, we can deliver on Tuesday.
However, please note that during busy periods this may be a longer leadtime.
What to expect when you order a Live Lobster
When you receive your lobster, remove it from the protective packaging that it has travelled in. Place the lobster on a tray, cover it with a damp cloth or tea-towel and put the tray into the refrigerator until you are ready to cook it. At 4oC, or below, a lobster will drift into a hibernative state. We would recommend cooking your lobsters within 24hrs of receipt
What to expect when you order a cooked Lobster
White Meat can be found in the tail and claws of the Lobster. In some female lobsters you may find Tomalley - this is the soft, dark green or red substance which is found in the body cavity of Lobsters, that fulfils the function of both the liver and pancreas. What to expect when you buy Live Mussels
Our mussels arrive with you live. To store them, leave them in the net that they arrive in. Twist the net so that any slack is taken up and place them in a bowl. Cover the bowl with a damp cloth or tea-towel and place it in the refrigerator until you are ready to prepare them. We would recommend using the mussels within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Oysters
To store your oysters once they arrive, remove them from all packaging and place them on a tray, or plate. Make sure you place them cupped-side down, with the ‘flat’ side uppermost. Cover them with a damp cloth or tea-towel and place them in the refrigerator until you are ready to eat them. We would recommend eating the oysters within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Crab Meat
We only sell fresh hand-picked Cornish crab meat and whilst the pickers are experts, they are not infallible. Please be aware that occasionally a small piece of shell may get left in the pot with the meat.
