The uplifting sunshine-packed flavours and bright Mediterranean colours in this warming stew are sure to elevate your February evenings. Tomatoes, cannellini beans, sweet shallots, garlic and a good slosh of red and white wine are all slow cooked to perfection along with a hit of fresh rosemary for a herby lift. As for the fish – it’s always going to be something of a surprise. We buy whatever tasty sustainable white fish is landed here in Cornwall on the morning we cook this dish – that could be whiting, pollack, haddock, coley or hake. We’ve found that all these fish work brilliantly in the recipe so rather than insisting on a specific species, we go with the flow and take what comes in. Being flexible in this way is one of the most sustainable approaches we can take, as it prevents waste and supports the local fishing community as they still get a good price.
All in all, this is proper winter bowl food to warm the cockles. Serve with crusty bread or a fresh green salad. (Serves 2)
