If you ‘paddle your own canoe’ it implies that you are doing something slightly unusual. Perhaps this is why the ‘canoe’ preparation is one of the more unusual ways to prepare a fish and it takes an incredibly skilled fishmonger to pull it off perfectly.
The wild Cornish Seabass, prepared in this way and stuffed with chef Brett’s gorgeous Spanish Potato Salad, is an absolutely mouthwatering prospect. The Wild Seabass is undoubtedly seafood royalty - A fast-swimming sleek-muscled silver predator who has traditionally enjoyed iconic status in the Cornish fishing industry.
Simply stuff the capacious canoe cavity of the Seabass with this Mediterranean mix of peppers, potatoes and tomatoes, underpinned with a spicy warmth and a little smokiness, and pop it in the oven to bake. Whip up a crisp accompanying salad whilst you wait and, when ready, enjoy a fabulous summer sharing meal.
You will receive:
1 x Wild Cornish Seabass ( min 750g), Canoed supplied fresh
400g x Spanish Potato Salad supplied fresh
Ingredients: Allergens in UPPER CASE Spanish Potato Salad: Potato, Chorizo, Shallot, Roasted red Pepper, Cherry Tomato, Chilli Sauce (Chilli, Vinegar (SULPHITES), Sugar, Salt), Coriander, Garlic, Smoked Paprika, Paprika, Cumin
- To cook:
- Preheat the oven to 200C / Gas Mark 6
- Line a baking tray with baking parchment *Remove the Seabass from the packaging and pat dry. Place on the lined baking tray, drizzle with olive oil and season to your taste
- Place the sealed pouch of Spanish Potato Salad into a large saucepan, cover with water and heat until just off boiling
- Carefully remove the pouch, open and pour the Potato Salad into the Seabass
- Bake in the centre of the oven for 15 minutes

Superb Bass!
Just wanted to say thank you for the superb bass eaten on 24th, baked in salt and indeed the cod (done Jamie's recipe adapted to Aga) both were absolutely delicious and devoured by some very happy people. When I move to UK next year I'll be ordering more often:))
