Chalk Stream Trout and Leek Veloute Kit
why?
Similar to terroir in wine, it is the pure chalkstream water that gives this exceptionally lean, athletic fish such a unique fresh, clean taste. Slow-grown over 2 years in the same conditions as a wild trout from the Test and Itchen, ChalkStream® produce firm, well-muscled, large trout low in fat.
Our Seafood Kitchen chefs have developed a beautifully simple sauce to complement the delicate flavour of the trout, in the form of a leek velouté. This translates as ‘velvet’ and it truly is a beautifully textured accompaniment to all the meaty, minerally flavour and crisp skin of the trout. Handmade in small batches by our chefs in Cornwall, it is loaded with fresh leeks, white wine, fresh lemon and butter alongside our beautifully crafted fish stock. A wonderful dinner any day of the week, and ready in less than half an hour.
