Our incredible FFT Surf ‘n’ Turf combo for two people comprises:-

  • 1 x Prime 7-800g Cornish Lobster, Cooked, Split & Cleaned
  • 2 x 6oz Pedigree Cornish Beef Rib-Eye Steaks
  • 1 x 90g roll of classic ‘Café de Paris’ Butter from our Seafood Kitchen.

This is an idea that we have often discussed over the years, but never brought to fruition. We truly believe that Cornish Lobster is the finest you can buy, so we always had the ‘Surf’ part covered. However, we were understandably nervous about compromising the excellence of the ‘Surf’ with inferior ‘Turf’. When we finally found it, the answer had actually been right under our noses all along, tucked away in a lush green valley on the South Cornish Coast - Traditional Cornish farmer and butcher, James Kittow, rearing his own small herd of Pedigree Red Ruby beef cattle and a herd of Pedigree Dexter cattle on a farm started by his great great grandfather – Prime Cornish 21 day aged Beef of the highest quality and superb provenance.

James is an award-winning butcher and grazier, local food hero, Cornish Farmer of the Year 2019 and producer of the finest sausages west of the Tamar. When we suggested a Surf ‘n’ Turf partnership he was delighted to be part of it and suggested the 6oz rib-eye as bursting with flavour and just the right size.

James represents the 5th generation of this famous Cornish family butchers & graziers, and lives, with his wife and children on the farm at Kilhallon, originally established by the Kittow family in 1880, where he grazes his prize pedigree herd of Red Rubies. The farm boasts a fully licenced, export approved butchery, which is also home to Mr. Kittow’s Famous Sausage Co.

Our Chefs were, as ever, eager to weigh in with a contribution to make the FFT Surf ‘n’ Turf experience just that little bit more special. They certainly didn’t disappoint, coming up with a classic compound butter named after the Café de Paris restaurant, in Geneva, where it was first popularised as an accompaniment to steaks. Made up of a bewildering list of herbs spices and condiments whipped into Cornish butter, our chefs opined that it would go superbly with both the lobster and the steak. How right they were! The secret, apparently, is enjoying the ‘power bite’ – a mouthful of steak AND lobster AND melted butter, chewed boldly together. Talk about your sensory overload, this could be the ultimate titillating tastebud tango!

The Cafe de Paris Butter contains the following ingredients: BUTTER, Shallot, Brandy (SULPHITES), Madeira (SULPHITES), Lemon Juice, MUSTARD (GLUTEN), Ketchup (Tomato, Vinegar, Sugar, CELERY), ANCHOVY fillet (FISH), Capers, Salt, Citrus Zest, Garlic, Worcestershire sauce (Anchovy FISH), Marjoram, Chives, Dill, Tarragon, Paprika, Curry Powder, Cayenne pepper, Rosemary. (Allergens in UPPER CASE)
