Our aim is to guide you to the most sustainable fish and shellfish species, and nudge you away from those that need a helping hand. £5 from the sale of every box goes to the charity too, as what they are doing is creating the real change that the industry needs, and we want to help them spread the word about the best Cornish seafood to eat.
About The Cornwall Good Seafood Guide
A project of Cornwall Wildlife Trust with the aim of providing a trusted and up to date summary of the sustainability of all of Cornwall’s fisheries. Every species of commercial value that is landed by Cornish fishermen to Cornish ports is featured on their website, www.cornwallgoodseafoodguide.org.uk. This guide draws together all available scientific information including population and fishing pressure, management and catch method impacts. To enable consumers and businesses to make their own well-informed choices when choosing Cornish seafood. Species scoring 1-3 are ‘recommended’, while 4s and 5s should be avoided.

Mackerel fillets
Mackerel is a delicious fish with beautiful tiger stripes of black and green and blue. The species is closely related to tuna, and its moist flesh is high in omega-3 oils and is best eaten when very fresh, barbequed, baked, or raw as sushi. Stocks across Europe are in a period of slight decline but industrial fishing targeting mackerel is banned in Cornish waters. Instead small scale, inshore fishing vessels target mackerel with handlines, which is a selective and low impact method, leaving the Cornish population in good health. Small quantities are also caught as by-catch in sardine ring netting and from using gill nets, but the most sustainable choice is handline caught.
Hake fillets
These large, impressive-looking fish are an excellent alternative to overfished cod, with a meaty, flaky white flesh that is delicious and satisfying. They can be found on or near the sea
bed during the daytime, and at night time they move up into mid-water to feed on squid and other fish. Hake are slow growing and can reach a size of 180cm, weighing up to 15kg. After a pronounced decline in the 1980s, a fishing management plan introduced in 2004 has seen the Cornish population increase to a healthy level. The most sustainable catch method for hake is by gill-netting which has nets anchored to the sea floor, rather than demersal or beam trawlers, as it is much more targeted and reduces by-catch. By law all these boats use ‘pingers’ which scare off dolphins and other cetaceans to prevent harm.
Plaice fillets
Plaice is a popular and tasty species and is Europe’s most important commercial species of flat fish. It is easily recognised by the distinctive orange spots on its upper surface, which it uses to help camouflage itself on the sea bed. Plaice stocks have increased dramatically in recent years and stocks are now well above sustainable levels. Populations are at healthier numbers off the north coast of Cornwall rather than the south, but both are within sustainable levels. Plaice is a versatile and often affordable flatfish that we should all be eating more of. The most sustainable catch methods used for plaice are demersal or ‘otter’ trawling, where the net moves over the sea bed, or gill netting, where the nets are anchored to the sea floor
Crab & Tomato Soup
A hand made luxuriantly silky tomato base boasts a depth of flavour highlighting the sweetness of Cornish crab, undercut with a little heat. Simply defrost, warm through and serve with some nice crusty bread. Heaven!
Pea Purée
A vibrant, uplifting pea purée, perfectly seasoned to please the palate and lift the spirits. Works beautifully with any fish. Just place the unopened pouch in hot water for 5 mins.
Watercress sauce
This creamy classic handmade in our seafood kitchen opens up a beautiful world of peppery goodness! Warm gently in a saucepan and pour over the plaice or hake.
Singapore sauce
A rich and spicy far-eastern inspired sauce that is incredibly moreish! Best suited to the mackerel. Gently warm through and serve with the simply-cooked fish.
