The luscious flavour and enticing creamy texture of scallops make them a delicacy in many countries. Scallops are also high in vitamins, minerals and contain an incredible 80% protein. Our two favourite ways to cook scallops are: searing them in a pan, and serving them with rice or vegetables; or grilling them in the shell with a flavoured butter. The problem with most scallops (not the ones we source) is that they are caught using one of the most destructive legal fishing methods there is - dredging. With this catch method large boats drag heavy equipment along the seabed, causing significant damage. That is why at Fish For Thought we only sell dive-caught or hand-dived scallops, which are caught by individual divers - one of the most selective and sustainable fishing methods you could hope for. This type of fishing can only be done in calm seas, so due to the unpredictable nature of catching scallops this way, we shuck and flash-freeze scallops in half dozen quantities.
