Plaice is one of the most delicious flat fish available and indeed is commercially the most important species across Europe and in the UK. Stocks of this fish are very sustainable and it is recommended by the Marine Conservation Society (MCS) and Cornwall Good Seafood Guide. It is yet another fantastically lean protein, high in healthy Omega 3 fats, low in calories and an excellent source of iron and B vitamins. The brown skin on the upper half of the body, which is covered in orange or red dots, makes the European plaice easy to identify. The fish can be cooked skin on and off and filleted or whole. The sweet and mild flavour of a plaice is great when served with garlicky spinach or nutty roast potatoes, and it works brilliantly when cooked whole as the centrepiece of a one-pot dish.
