Here’s why! “It’s hard to think how fresh lobster could be improved on but one way is to serve an equally amazing wine and for me that has to be white burgundy. And this wine, Saint-Aubin (pronounced sant oh-ban), is a real insider’s choice because it’s produced just outside the better known appellations of Chassagne-Montrachet and Puligny-Montrachet. In fact it’s a wine I always look for on a wine list. With a few years maturity this wine is smooth, creamy and - dare I say - sexy and just perfect with the rich thermidor topping though it would be great with the lobster soup too. And with the crab come to that …. Anyone who thinks they don’t like chardonnay should think again!”
