This box has been created so that you can share the same special dinner with your mum, even when apart. It features our beautifully light and delicate Cornish crab soufflé, served in the shell, followed by our iconic, bestselling Cornish lobster paired with our handmade thermidor sauce, which is loaded with wine, shallots, parmesan and cream. All served alongside rich dauphinoise potato and a rocket & parmesan salad, finished with a luxurious port & truffle dressing.

Genuine Cornish-made Italian tiramisu. This authentic Italian premium dessert is made by Ugo from his late father’s family recipe. They used to make it as an après-ski treat after a long day on the slopes. Today Ugo lives in in Cornwall and makes this exceptional tiramisu – expect a rich and delicate dessert created using the best ingredients from Italy (Italian Coffee; Mascarpone Cheese, Vicenzi Savoiardi) and Cornwall (St Ewe Eggs).

Everything is handmade here in Cornwall with the freshest, most sustainable seafood you can get – unless you catch it yourself.

All the prep has been done for you, just some light baking and grilling is required in your own kitchen - full instructions included. Dial in and cook together with your mum so you get to share the whole experience! Each box serves one person, so you will need to place an order for yourself and an order for your mum.

You will receive:

1 x tray containing 100g crab soufflé with 100g pouch of Themidor Sauce (supplied Frozen)
1 x Crab Shell + 1 spare

1 x 1/2 Cooked & Split Cornish Lobster
100g pouch of Thermidor Sauce
120g tray of Dauphinoise Potato portions
40g Wild Rocket
20g pouch of Port & Truffle Salad Dressing
20g pouch of Parmesan Cheese, grated

Ingredients:

Twice Baked Cornish Crab Soufflé - CRAB (30%) (CRUSTACEA), EGG, Stock(FISH, Carrot, Onion, CELERY, Garlic, Fennel, Leek), CREAM, Parmesan CHEESE, MUSTARD (GLUTEN), Shallots, Wine (SULPHITES), Parsley, Lemon, LOBSTER (CRUSTACEA), Tomato, Peppercorns), Cayenne, Cognac (SULPHITES), Chives, Salt

Thermidor Sauce - FISH Stock (Fish Bones, Carrot, Onion, CELERY, Garlic, Fennel, Leek, Herbs), CREAM, PARMESAN CHEESE, English MUSTARD (GLUTEN), Shallots, White Wine (SULPHITES), Parsley, Lemon Juice, Pepper, Salt.

Dauphinoise Potato - Potato, DOUBLE CREAM, Shallots, Garlic, Thyme, Salt, Pepper.

Port & Truffle Salad Dressing - Port (SULPHITES), Pomace oil, Shallots, Red wine Vinegar (SULPHITES), Truffle Oil, Xantham Gum.

CRAB SOUFFLE Method:

  • Allow the Thermidor Sauce to defrost.
  • Preheat your oven to 190C / Gas mark5
  • Remove from the packaging and place the soufflé into the shell
  • Place on a baking tray
  • Pour the sauce over the soufflé and into the shell
  • Place into the centre of the oven for 28 mins
  • Serve piping hot
  • NOT suitable for microwave cooking

LOBSTER THERMIDOR Method:

  • Preheat your oven to 190C
  • Place the Dauphinoise Potato on a baking tray
  • Unpack your Lobster halves and crack the claws.
  • Remove the claw meat and dress it back into the Lobster.
  • Evenly distribute the Thermidor Sauce over the top of the Lobster Meat in the shells.
  • Place the Dauphinoise Potato in the centre of the oven for 12 Minutes
  • Place inner side up on a tray and warm under the grill for 5-10 mins.
  • Dress the rocket with the Salad dressing and sprinkle the Parmesan over it.

The Best Lobsters

As ever, everything arrived OK thanks and we’ve just eaten the lobsters (a Valentine’s treat for my wife – oh all right, for me too!). The substitution of Turbot in place of the Brill I ordered, which was unavailable, was fine and much appreciated. Thanks for that. Finally, as I’ve said before, your new packaging is a huge improvement and makes the whole process much easier at the receiving end. I keep mentioning FFT to family and friends so I hope you get some more sales from them.

Delighted to receive our combination box on time and it is always exciting to open it and to plan a few menus using the delicious sauces. Homemade fish pie tonight! Delighted to see that you are moving towards ready cooked meals and the crab bake was great for lunch for a single person. We will be repeating that order and I would have thought there was a big market for you in these products, particularly single portions for OAPs who want something to pop into the Aga. Freezer well stocked now!
