Monkfish has something of a reputation as a monster of the deep, but we think it is an absolutely stunning fish when you get up close, with incredible colours and stunning evolutionary touches that make it such a formidable predator. Containing only one main bone, this firm and meaty fish has a delicious taste and great texture. If you have never tried it, we thoroughly recommend you do - it can be prepared in a variety of ways, including grilling, sautéing, roasting, and as a fantastic fish at the heart of a seafood curry. It wasn’t that many years ago that this fish was very much out of favour and was used as bait in lobster pots - that certainly is not the case any more as it is a gaining in popularity across the UK. Monkfish has a sweet and mild flavour and firm texture that is often compared to lobster. Stocks in Cornish waters have shown that this species is in good health around our coastline, and it has recently been upgraded to a Marine Conservation Society (MCS) rating of 2 and is Recommended by the Cornwall Good Seafood Guide. When buying monkfish from Fish For Thought, we only source fish landed by small demersal trawlers - guaranteeing sustainability and quality. The fish are mainly landed in the markets of Newlyn and Plymouth.
