Seafood Paella for Two

Seafood paella is a flavourful and vibrant dish that showcases the bounty of the sea. Traditionally prepared in a large, shallow pan and cooked over an open flame, infusing the ingredients with a smoky essence.
The star of seafood paella is undoubtedly our sustainable seafood and our chefs have done most of the prep for you, making it a one pot wonder where all you have to do is combine the ingredients and pop it in the oven. Expect chunky diced white Cornish fish and plump, buttery mussels, alongside paella rice cooked with green peppers, garlic, saffron, chilli and a decent dash of Tio Pepe sherry. It’s all finished off with a piquant salsa of roasted red peppers, cherry tomatoes and shallots cooked with paprika, and fresh coriander. You’ll be glowing by the end!
As for the fish – it’s always going to be something of a surprise. We buy whatever tasty sustainable white fish is landed here in Cornwall on the morning we cook this dish – that could be pollack, haddock, coley, gurnard or hake. We’ve found that all these fish work brilliantly in the recipe so rather than insisting on a specific species, we go with the flow and take what comes in. Being flexible in this way is one of the most sustainable approaches we can take, as it prevents waste and supports the local fishing community as they still get a good price.
You will receive:
400g pouch of Paella Sofrito (Supplied Frozen) 250g Mussels (Live) 250g Diced White Fish (Supplied Fresh) 75g Paella Rice
- To cook: *
- Defrost the Paella Sofrito *
- Preheat the oven to 195C / Gas Mark 5 * *In an 8inch pan, mix the Paella Sofrito and rice together. Arrange the Diced Fish and Mussels on top, pushing them into the rice and Sofrito mix. Cover the dish with a double layer of kitchen foil or it's own lid if it has one.
- Cook for 30 minutes then remove the lid and gently stir and cook for a further 20 minutes with no lid. *
- For an authentic finish add wedges of lemon and chopped parsley to the cooked dish and serve. *

Wedding Anniversary Celebrations!
just thought I'd drop you a quick email to let you know our order arrived on Saturday morning. I opened the box and it smelled like Cornwall, the sea. The mussels were superb in the mariniere sauce and the lobster thermidor was fantastic! We were treating ourselves as it is our 26th wedding anniversary tomorrow and to be honest, we prefer to buy the very best ingredients and cook ourselves than go to a restaurant and be disappointed. We were delighted with the quality of the fish, as always.
