Lemon sole is delicious fish that interestingly is neither a real sole, nor does it taste of lemon. It is a member of the plaice family, although it eats closer to Dover Sole than Plaice. It has delicate, sweet white flesh and is best cooked simply. These fillets are carefully hand-cut, packed and blast frozen - they are skin on. Each pack will contain enough fillets for 2 x 170g portions, which is enough for 2 main course portions or 4 starters.

Lemon sole fillets have a delicate and sweet flavour and as with most fish, are best cooked very simply. Lightly season and oil and cook skin side down under the grill - they will only take a few minutes. Serve with new potatoes and dress with a little lemon butter.
