Dover sole are considered by some to be one of the 'kings' of the sea, and leading Chefs seem to adore them. The best way to cook whole fish is also one of the simplest - lightly seasoned and grilled with a little butter. Score the skin either lightly oil or put some butter on the fish and season, before putting under a very hot grill for about 6 minutes on each side.
