Wild Seabass stocks are under significant pressure at the moment, and as such we have stopped sourcing this fish whilst stocks recover.
Instead we are offering Farmed Seabass from responsible farms in Greece and Turkey. Many restaurants use these smaller more cost effective fish on their menus, and whilst not the same as Wild Seabass they are still delicious and can be used in exactly the same way. Each whole fish is a generous sharing starter for 2 or main course for one, and for a light lunch, one fish would be enough for 2.

The availability of all seafood at market can be impacted by many different factors – Seasonality, bad weather, tidal variations, which boats are landing, or even good old-fashioned fisherman’s luck… and in the current circumstances, unprecedented demand has further added to uncertainty.
Rest assured that we will make every effort to source this fresh product for your order, however, if we are unable to do so for any reason, we will replace it with a frozen alternative.
When fish happen to be plentiful at market, we try to buy a little extra which we expertly prepare and blast freeze, here on site, for just such an eventuality. The replacement should arrive with you frozen. Do not re-freeze seafood that has defrosted.

Whole fish will weigh between 450-500g. Prepared fish will obviously weigh slightly less.
