Plaice is a great value flat fish, with a subtle flavour, that can be cooked and served in exactly the same manner as any of its more expensive cousins. When very fresh and cooked simply, it has few rivals. It is a very sustainable option, with healthy stocks in Cornish waters being fished responsibly. One whole fish will work as a shared starter for 2 or a generous main course for 1.

Plaice is quite a versatile fish. Large fish lend themselves well to being filleted, and treated like Brill or Turbot. We recommend you cook single portion fish on the bone, and our favourite method is to roast the fish whole on a bed of Mediterranean-style vegetables.
