Lemon sole fillets have a delicate and sweet flavour and as with most fish, are best cooked very simply. Lightly season and oil and cook skin side down under the grill - they will only take a few minutes. Serve with new potatoes and dress with a little lemon butter. Alternatively take them skin off and roll them stuffed with white crab meat and then bake quickly in the oven with lemon butter - divine!
