Few fish lend themselves to a satisfying curry like the monkfish, indeed the meaty texture and robust flavour make it a perfect partner for those wonderful South Asian spices and the accompanying dose of warmth. Chef Brett has created a small one-off batch of creamy curry with his usual panache, cramming it with Chilli, Coriander, Ginger, Garlic, Paprika, Cumin and delicate cuts of Cornish monkfish. We have decided to offer it as a meal kit for 2 people and will include a pouch of his sumptuously silky Sweet Potato & Spinach Dhal and some long grain rice.
You will receive:

400g pouch Cornish Monkfish Curry (supplied frozen)

300g pouch Sweet Potato, Coconut & Spinach Dhal (supplied frozen)

100g Long Grain Rice (supplied raw)
Ingredients (ALLERGENS in UPPER CASE):
Cornish Monkfish Curry - Monkfish (FISH), Tomato, Onion, Coconut Milk, FISH Stock, CREAM (MILK), Red Pepper, Olive Oil, Red Wine (SULPHITES), CELERY, Rose Harissa, Coriander, Garlic, Chilli, Ginger Tomato Puree, Curry Powder, Garam masala, Paprika, Cumin.
Sweet Potato, Coconut & Spinach Dhal - Sweet Potato, Red Lentils, Onion, Coconut Milk, Spinach, Sunflower Oil, Tomato Puree, Water, Chilli, Salt, Garlic, Vegetable Stock, Ginger, Curry Powder, Cumin, Paprika, Garam Masala, Turmeric, Pepper.

Sweet Potato, Coconut & Spinach Dhal:

Cornish Monkfish Curry:
- Energy 130kcal / 469kj

Cooking Instructions:
- Rinse rice in running water until the water runs clear.
- Plaice into a saucepan of boiling, salted water and cook on the hob for 14 mins.
- If cooking from frozen - Place the pouches of Curry and Dhal into a large pan and cover with hot water. Bring to the simmer and simmer for 10 mins.
- Drain the rice and divide between 2 plate or bowls.
- Carefully remove the pouches from the hot water, cut them open and divide between the plates / bowls.
- Alternatively, if defrosted, simply empty the contents of the Pouches into two separate saucepans and heat through gently. Serve as above.
