Gin and cucumber collins cocktail 2 ounces gin 1 ounce freshly squeezed lemon juice ½ ounce simple sugar syrup (or adjust to taste) 3-4 cucumber slices soda water ice cubes cucumber slice or lemon wheel (for garnish)

  1. In a cocktail shaker, muddle the cucumber slices to release their flavours
  2. Add gin, lemon juice, syrup, and a handful of ice cubes to the shaker
  3. Shake vigorously for about 15 seconds to combine and chill the ingredients
  4. strain the mixture into a tall glass filled with ice cubes
  5. Top it off with soda water to your desired level of effervescence
  6. Give it a gentle stir to mix
  7. Garnish with a cucumber slice or a lemon wheel
  8. Serve alongside smoked salmon blinis and enjoy the refreshing combination
