Turbot, Whole Fish Filleted

Turbot really is the 'King' of the sea, with a price tag to match its exalted status. It has a wonderful firm texture and a meaty taste, making it a favourite with top Chefs. They are the largest of the South West flatfish, fast growing, big and muscular! In terms of popularity, it is up there with lobster and Dover Sole and is the basis for some simply sensational seafood dishes. These fillets, are hand cut from one large whole fish weighing approximately 1.5 kg. A fish of this size will yield approximately 600g of fillet, depending on the time of year, or 500g if you prefer to have your fillet skinned. Each pack will work as a starter for possibly 6-8 and a main course for 4 people.

  • Landed daily to markets including Plymouth and Newlyn
  • Little is known about Turbot stocks and as such we recommend it is only eaten as an occassional treat
  • Good source of Omega 3 oils and packed with vitamins and minerals
  • These lovely thick fillets can be cooked whole or portioned into serving size - pan-frying works well and only takes a few minutes

We source a lovely large fish and therefore the fillets cut from them are agreeably thick. Turbot is a beautifully firm, meaty fish which is extremely versatile, lending itself well to pan-frying, grilling, poaching and steaming. It works well with light sauces, so the Turbot remains the star of the show, like a veloute or hollandaise.

Turbot is a low fat source of protein and a good source of Omega 3 oils. It is also loaded with Vitamins including B3 and B12, and minerals including magnesium, selenium and phosphorus. These assist in the functions of immune system, maintenance of strong teeth, bones and supports metabolism.

The Best Lobsters

As ever, everything arrived OK thanks and we’ve just eaten the lobsters (a Valentine’s treat for my wife – oh all right, for me too!). The substitution of Turbot in place of the Brill I ordered, which was unavailable, was fine and much appreciated. Thanks for that.
