Mackerel is quite stunning, with wonderful blue, black, green and silver tiger stripes running all along the top and down the sides. The Cornish fishery is a wonderful example of best practice sustainable fishing, with small inshore day-boats catching the fish by hook and line. They are of course one of the best oily fish you can eat and very healthy. They can be cooked whole, gutted or as fillets. Each portion will be one larger fish or 2 medium ones and is the right amount for a starter for 2 or a generous main course for 1.
