This stunner of a dish is deserving of a place on any Christmas Day menu, as it is a real piece of table theatre! A luxurious whole Cornish brill cooked on the bone, served with a rich and luxurious port & truffle butter. A celebration of prime sustainable Cornish fish that is deceptively easy to cook. We’ve done all the prep for you having trimmed and skinned the fish, making your Christmas cooking all the easier.
Brill has a similar firm texture and meaty flavour to its better-known cousin the Turbot; we think it is a superb fish, in its own right. Stocks off the Cornish coast are sustainable and 'Recommended' by The Cornwall Good Seafood Guide - the Cornwall Wildlife Trust’s guide to truly sustainable seafood.
You will receive:
1 x Cornish Brill, Pan Ready & Skinned (Supplied Frozen)
1 x Port & Truffle Butter (Supplied Frozen) 120g
*Defrost the Brill.
*Preheat the oven to 190C / Gas Mark 5. Line a baking tray with baking parchment or silicon paper.
*Oil & season the Brill and place on the paper. Place in the centre of the oven for 24-26 mins.
*When the Brill is cooked, remove from the oven and place the discs of butter on to it to melt.

How much is the delivery charge?
We are currently offering FREE weekday delivery, with a minimum order value of £35.
We use DPD for all our deliveries who provide a 'Next Day' service for us. During busy periods, please be patient with DPD delivery drivers
Saturday delivery is £10 (for all orders under £100. For orders over £100, delivery is free)

Which courier do you use to deliver?
We work with DPD UK who provide us and our customers with a fantastic service.
When we are preparing to despatch your order, you will be emailed a parcel number and a 'Show me my Options' link which allows you to track your order online, so that you can follow the progress of your delivery. Please DO NOT RESCHEDULE YOUR DELIVERY TO ANOTHER DAY. You will receive notification of an hours delivery slot giving you the confidence that your parcel will soon be with you! Should you have any concerns or problems with your order please call us on 01208 262202 and we will help you in any way we can (please have your order number to hand)
Please note: Fish for Thought cannot be held responsible for our courier’s failure to deliver to the specified time due to adverse weather conditions or other circumstances beyond our control. In these instances, we will, however, make our best efforts to correct the problem.

How much weight do Live Lobsters lose when cooked?
The Lobster weight listed on our shop are 'live' weight. All Lobsters lose a small amount of weight once cooked. The general guideline would be:
10-15% loss for a Cooked Lobster
15-20% loss for a Cooked, Split and Cleaned Lobster
What to expect when you purchase a Lobster
Delicious White Meat - this can be found in the tail and claws of the Lobster
Tomalley - this is the soft green, red or black substance which is found in the body cavity of Lobsters that fulfills the function of both the liver and pancreas.
It is perfectly safe to eat and is often considered a delicacy. It may be eaten alone or used in sauces for flavour and as a natural thickening agent.
Please note: we do not crack the claws on our cooked Lobsters (this is to ensure the juices within the claw keep the meat soft and moist)

How soon can you deliver?
Normally this is within 48 hours (taking into account that we deliver Tuesday to Saturday). This allows us time to source, prepare, dispatch and deliver your order to you.
For example, if you place an order Monday, we can normally deliver Wednesday. Place an order on Friday, we can deliver on Tuesday.
However, please note that during busy periods this may be a longer leadtime.

Our Christmas Shop is Now Open!
As always, we recommend placing your Christmas order sooner rather than later.
As we creep closer to Christmas, our delivery slots fill up pretty quickly! Once we reach our maximum capacity, we will need to close the online shop to deliveries.
We are currently offering delivery up to Christmas Eve this year, delivering Tuesday through to Saturday.
DPD provide a NEXT DAY delivery service for us. Please take this into consideration when selecting your delivery date (especially if you are ordering frozen items and looking to serve them when you receive them).
What to expect when you order a Live Lobster
When you receive your lobster, remove it from the protective packaging that it has travelled in. Place the lobster on a tray, cover it with a damp cloth or tea-towel and put the tray into the refrigerator until you are ready to cook it. At 4oC, or below, a lobster will drift into a hibernative state. We would recommend cooking your lobsters within 24hrs of receipt
What to expect when you order a cooked Lobster
White Meat can be found in the tail and claws of the Lobster. In some female lobsters you may find Tomalley - this is the soft, dark green or red substance which is found in the body cavity of Lobsters, that fulfils the function of both the liver and pancreas. What to expect when you buy Live Mussels
Our mussels arrive with you live. To store them, leave them in the net that they arrive in. Twist the net so that any slack is taken up and place them in a bowl. Cover the bowl with a damp cloth or tea-towel and place it in the refrigerator until you are ready to prepare them. We would recommend using the mussels within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Oysters
To store your oysters once they arrive, remove them from all packaging and place them on a tray, or plate. Make sure you place them cupped-side down, with the ‘flat’ side uppermost. Cover them with a damp cloth or tea-towel and place them in the refrigerator until you are ready to eat them. We would recommend eating the oysters within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Crab Meat
We only sell fresh hand-picked Cornish crab meat and whilst the pickers are experts, they are not infallible. Please be aware that occasionally a small piece of shell may get left in the pot with the meat.
Can I amend or add to my existing order?

We ideally require a minimum of 24 hours notice to amend your order for you. If you would like to add more products to your order, please call us with your order number and your payment card details.
Will Fresh Fish Always Be Available?
Rest assured that we will make every effort to source fresh product for your order, however, if we are unable to do so for any reason, we will replace it with a frozen alternative.
The availability of all seafood at market can be impacted by many different factors – Seasonality, bad weather, tidal variations, which boats are landing, or even good old-fashioned fisherman’s luck… and in the current circumstances, unprecedented demand has further added to uncertainty.When fish happen to be plentiful at market, we try to buy a little extra which we expertly prepare and blast freeze, here on site, for just such an eventuality. The replacement should arrive with you frozen. Do not re-freeze seafood that has defrosted.
Unlike many of our competitors, we will NEVER send you frozen, or previously-frozen, lobsters. ALL our lobsters are cooked fresh to order on the premises. This allows for them to be frozen on receipt, should you wish to consume them at a later date
