Oysters Rockefeller Kit

From £14.50 Per Kit

A delicious hot oyster dish that’s so rich and decadent it was named after the richest man in America at the time of its invention! This is our own take, which is a white wine velouté sauce with English mustard and parmesan, finished with chopped spinach and parsley, topped with a parsley parmesan crumb. All made in small batches by our Chefs here in Cornwall. Just glorious.
The oysters will be fresh and live, so make sure you’ve got an oyster knife for shucking. Once open and shucked, all you have to do is add the ready-made Rockefeller sauce and top with the parmesan crumb before popping in the oven (see below) to create a glitzy, and romantic, starter for 2 people.

The Porthilly Pacific Oysters we source are grown in the tidal waters of the stunning Camel Estuary, near Rock, on the North Cornish Coast. The Marshall family have been farming the land and sea here for 5 generations, and their oysters are a culinary delight - don't just take our word for it, they recently won Gold in the British Oyster Championship!

You will receive:
6 x live, fresh Porthilly Oysters (make sure you have an oyster knife – available here https://www.fishforthought.co.uk/shop/shellfish/oyster-knife)
1 x 180g pouch Rockefeller Sauce
1 x 90g pouch Persilade crumb topping

Method:

  • Preheat oven to 180c / Gas mark 4.
  • Open the oysters and remove from the shell.
  • Place a teaspoon of Rockefeller sauce in each shell and then put the oyster back in the shell.
  • Place some more sauce on the oyster and top with the Persilade crumb.
  • Put the oysters onto a baking tray in the centre of the oven for 10-12 mins. Serve piping hot.

Tip: To keep the oysters steady on the tray, try placing them on top of a bed of salt, or a slice of bread or maybe metal cookie cutters, if you have some!

Health & Nutrition

The impressive health benefits of oysters come from their vast stockpiles of minerals, vitamins, and organic compounds. In fact, certain minerals are in their highest content in oysters, meaning that they are the premiere food item in the entire world for their supplementation, particularly of zinc. They have very high levels of protein, vitamin D, vitamin B12, iron, copper, manganese, and selenium. They also contain high levels of niacin, riboflavin, thiamin, vitamin C, phosphorus, potassium, and sodium. Finally, they are a huge source of beneficial cholesterol, antioxidants, omega-3 fatty acids, and water. If that is not a superfood, then I don't know what is! Oh....and it can have aphrodisiac benefits too!
