In a break with our strict 'No Frozen Lobsters' tradition, we have come up with a variation on one of our classic bestsellers, just for this Christmas season. A lot of our customers love the sweetness of our pot-caught Cornish lobster and adore the creamy richness of Chef Brett's signature Thermidor Sauce, however they lack the time (or inclination), to faff around with the preparation of this culinary gem. For these people, Brett has put together the 'World's Easiest Lobster Thermidor'. All you do is heat it to the correct temperature 'et Voila!' the job is done. a delicious Lobster Thermidor for One in minutes. To accomplish this level of convenience, we have had to compromise slightly and we we will be sending these prepared lobsters to you frozen.
Cornish lobster is widely recognised as being the very best in the world, and is something of a speciality of ours! Possibly the only thing that might improve the sweetest and richest tasting lobsters available, would be Chef Brett's luxurious, restaurant standard, Thermidor Sauce. We source our lobsters from small inshore day boats that fish the clear blue waters of the Cornish coast and are proud that we never have and never will import cheaper and inferior quality lobsters. Boats like the Janice-Mary of Padstow, the Hannah-Jack from Newquay and the Girl Deedee of Cadgwith regularly land to us.
Unlike many of our competitors, if you order FRESH lobsters from Fish for Thought, then we will send you FRESH lobsters. By the same token, in the case of this particular dish, If you order FROZEN lobsters from Fish for Thought, then we will send you FROZEN lobsters.
To cook:
- For best results, cook from frozen
- Preheat the oven to 220C (fan assisted) / gas mark 7.
- Remove the Lobster Thermidor from the packaging, place the Lobster on a piece of baking paper on a baking tray and bake in the centre of the oven for 24 minutes.
- Once cooked, allow to rest for 5 minutes.
- Serving Suggestion: Halfway through the cooking time, add some cooked boiled new potato halves around the Lobster to soak up the sauce and juice that may spill from the Lobster to make for a stunning side dish!
