Ethically sourced, dive-caught scallops - what more can we say!
Each pack will contain 6 scallop meats which is enough for 3 starter portions or 2 main courses, depending on your appetite
Here at Fish for thought we took the decision some time ago that we would no longer sell scallops that had been sourced by dredging. It is one of the most indiscriminate and destructive fishing methods currently employed round our shores, decimating the seabed and therefore the complex, interdependent eco-systems on which the rich diversity of our marine life depends.
All the scallops that we now sell have been individually hand-plucked from the seabed, by discerning divers who are able to leave immature scallops undisturbed, thus ensuring that the beds are not overfished and the colony can thrive. This is totally sustainable fishing, with zero impact on the seabed and producing prime, plump scallops with high levels of Omega 3 Oils and packed with vital vitamins and minerals. Due to the costs involved in fishing this way and the superior nature of the product, these shellfish obviously command a considerably higher market price, but we think it is a price worth paying for such an ethically sourced and incredibly tasty treat!
Due to the necessarily sporadic nature of supply (Divers face even more weather constraints than regular fishermen) we take these wonderful shellfish whenever we can source them. We shuck them and immediately blast-freeze them in 1/2 dozens, so that we have enough stock to meet demand when we make them available to our customers. Scallops tend to freeze well, with the texture and flavour virtually unaffected if defrosted properly. The more slowly they defrost the better they will be, so leaving overnight in a refrigerator gives the best result.
Hand Dived, totally sustainable and no impact on the seabed
Super-healthy as a very lean protein, with high levels of Omega 3 Oils and packed with vital vitamins and minerals
Delicious seared in a pan on high heat for just 2 minutes each side and served simply - sweet & succulent.

How much weight do Live Lobsters lose when cooked?
The Lobster weight listed on our shop are 'live' weight. All Lobsters lose a small amount of weight once cooked. The general guideline would be:
10-15% loss for a Cooked Lobster
15-20% loss for a Cooked, Split and Cleaned Lobster
What to expect when you purchase a Lobster
Delicious White Meat - this can be found in the tail and claws of the Lobster
Tomalley - this is the soft green, red or black substance which is found in the body cavity of Lobsters that fulfills the function of both the liver and pancreas.
It is perfectly safe to eat and is often considered a delicacy. It may be eaten alone or used in sauces for flavour and as a natural thickening agent.
Please note: we do not crack the claws on our cooked Lobsters (this is to ensure the juices within the claw keep the meat soft and moist)

What to expect when you order a Live Lobster
When you receive your lobster, remove it from the protective packaging that it has travelled in. Place the lobster on a tray, cover it with a damp cloth or tea-towel and put the tray into the refrigerator until you are ready to cook it. At 4oC, or below, a lobster will drift into a hibernative state. We would recommend cooking your lobsters within 24hrs of receipt
What to expect when you order a cooked Lobster
White Meat can be found in the tail and claws of the Lobster. In some female lobsters you may find Tomalley - this is the soft, dark green or red substance which is found in the body cavity of Lobsters, that fulfils the function of both the liver and pancreas. It is perfectly safe to eat and is often considered a delicacy. It may be eaten alone or used in sauces for flavour and as a natural thickening agent.
What to expect when you buy Live Mussels
Our mussels arrive with you live. To store them, leave them in the net that they arrive in. Twist the net so that any slack is taken up and place them in a bowl. Cover the bowl with a damp cloth or tea-towel and place it in the refrigerator until you are ready to prepare them. We would recommend using the mussels within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Oysters
To store your oysters once they arrive, remove them from all packaging and place them on a tray, or plate. Make sure you place them cupped-side down, with the ‘flat’ side uppermost. Cover them with a damp cloth or tea-towel and place them in the refrigerator until you are ready to eat them. We would recommend eating the oysters within 24-36hrs of receipt. NOT suitable for home freezing unless you cook them first
What to expect when you purchase Crab Meat
We only sell fresh hand-picked Cornish crab meat and whilst the pickers are experts, they are not infallible. Please be aware that occasionally a small piece of shell may get left in the pot with the meat.

Will Fresh Fish Always Be Available?
Rest assured that we will make every effort to source fresh product for your order, however, if we are unable to do so for any reason, we will replace it with a frozen alternative.
The availability of all seafood at market can be impacted by many different factors – Seasonality, bad weather, tidal variations, which boats are landing, or even good old-fashioned fisherman’s luck… and in the current circumstances, unprecedented demand has further added to uncertainty. When fish happen to be plentiful at market, we try to buy a little extra which we expertly prepare and blast freeze, here on site, for just such an eventuality. The replacement should arrive with you frozen. Do not re-freeze seafood that has defrosted.
Unlike many of our competitors, we will NEVER send you frozen, or previously-frozen, lobsters. ALL our lobsters are cooked fresh to order on the premises. This allows for them to be frozen on receipt, should you wish to consume them at a later date
