A delicious hot oyster dish that’s so rich and decadent it was named after the richest man in America at the time of its invention! This is our own take, which is a white wine velouté sauce with English mustard and parmesan, finished with chopped spinach and parsley, topped with a parsley parmesan crumb. All made in small batches by our Chefs here in Cornwall. Just glorious.

The oysters will be fresh and live, so make sure you’ve got an oyster knife for shucking. Once open and shucked, all you have to do is add the ready-made Rockefeller sauce and top with the parmesan crumb before popping in the oven (see below) to create a glitzy, and romantic, starter for 2 people.

You will receive:
6 x live, fresh Pacific Oysters
1 x 180g pouch Rockefeller Sauce
1 x 90g pouch Persilade crumb topping

Method:

  • Preheat oven to 180c / Gas mark 4.
  • Open the oysters and remove from the shell.
  • Place a teaspoon of Rockefeller sauce in each shell and then put the oyster back in the shell.
  • Place some more sauce on the oyster and top with the Persilade crumb.
  • Put the oysters onto a baking tray in the centre of the oven for 10-12 mins. Serve piping hot.

Tip: To keep the oysters steady on the tray, try placing them on top of a bed of salt, or a slice of bread or maybe metal cookie cutters, if you have some!

Sustainability & Provenance

The Porthilly Pacific Oysters we source are grown in the tidal waters of the stunning Camel Estuary, near Rock, on the North Cornish Coast.
Store oysters in a fridge at no lower than 4°C, cupped side down on a tray or plate and covered with a clean damp cloth. Eat within two days of receipt. Read more
