Dover sole is the 'king' among smaller flat fish. It is delicious, easy to cook and sustainable. It does fetch a hefty premium over other soles due to the high demand it garners. As a special treat we think it is absolutely worth it! Traditionally it is cooked on the bone, but it works very well off the bone too. Here we trim the fish, and remove the top dark skin. It is prepared for the pan before packing and blast freezing.
One whole fish is enough for a sharing starter for 2 or a generous main course for 1.

How much weight do Live Lobsters lose when cooked?
The Lobster weight listed on our shop are 'live' weight. All Lobsters lose a small amount of weight once cooked. The general guideline would be:
10-15% loss for a Cooked Lobster
15-20% loss for a Cooked, Split and Cleaned Lobster
What to expect when you purchase a Lobster
Delicious White Meat - this can be found in the tail and claws of the Lobster
Tomalley - this is the soft green, red or black substance which is found in the body cavity of Lobsters that fulfills the function of both the liver and pancreas.
It is perfectly safe to eat and is often considered a delicacy. It may be eaten alone or used in sauces for flavour and as a natural thickening agent.
Within 48 hours (taking into account that we deliver Tuesday to Saturday). This allows us time to source, prepare, dispatch and deliver your order to you.
For example, if you place an order Monday, we can deliver Wednesday. Place an order on Friday, we can deliver on Tuesday.
