For those not so keen on eating fish on the bone Dover sole fillets are amazing. Lightly season and oil and cook skin side down under the grill or in a medium hot pan - they will only take a few minutes. Serve with new potatoes and dress with a little melted butter and capers. Alternatively you could it à la meunière, which is a classic Dover sole dish, the French equivalent to our fish and chips!
