Pesto Fish Sauce

Ingredients
- 800ml Fish Stock
- 200ml Double Cream
- 2X Sunblush Tomato
- 1 tspn Pesto
Method
- Place fish stock into a thick bottomed saucepan, bring to the boil and boil rapidly to reduce until the stock is condensed to about a quarter, and is strong and well flavoured.
- Add an equal amount of double cream and boil again until it reaches a smooth, velvety sauce consistency, pass through a fine strainer.
- Bring fish cream sauce to the boil and add pesto and roughly chopped tomatoes.
- Season as necessary.
