Pesto Fish Sauce

Take it up a notch, with this incredibly tasty, simple and versatile pesto sauce.

  • 800ml Fish Stock
  • 200ml Double Cream
  • 2X Sunblush Tomato
  • 1 tspn Pesto


  1. Place fish stock into a thick bottomed saucepan, bring to the boil and boil rapidly to reduce until the stock is condensed to about a quarter, and is strong and well flavoured.
  2. Add an equal amount of double cream and boil again until it reaches a smooth, velvety sauce consistency, pass through a fine strainer.
  3. Bring fish cream sauce to the boil and add pesto and roughly chopped tomatoes.
  4. Season as necessary.
