Cornish Haddock Fillet and Fragrant Soy Dressing

Ingredients

  • 160g Haddock portions x 2
  • 120g pouch of Fragrant Soy Dressing

Further ingredients required to make this recipe:

140g basmati rice 2 x bok choi 2 x spring onions

Method

1 Soak the rice in cold water for about 30 minutes then drain in a sieve. Bring a saucepan of lightly salted water to the boil and place the rice into it, stir to the boil and simmer gently until tender, approx. 10 – 12 minutes 2 Place the haddock fillets into a steamer, cover tightly and steam for 8-10 minutes (depending on the thickness of the fillets) 3 Prep and cook the bok choi in some boiling salted water, or in a steamer, for 3 to 5 minutes until tender, but not overcooked. Meanwhile shred the spring onion 4 Whisk the Fragrant Soy Dressing together and add the shredded spring onion 5 To serve, divide the rice onto the plates with the bok choi alongside and place the fish carefully over the top. Spoon the dressing over the top in an artistic manner
