Mariniere Sauce

The classic Moules Marinière, this sauce is vey quick, very simple and very delicious.

Ingredients

  • 800ml Fish Stock
  • 200ml Cream
  • 50g Shallot 50g
  • 50ml White Wine
  • 1 Clove Garlic
  • 1 Branch Thyme

Method

  1. Boil the stock on a high heat until it has reduced to a 1/4 of it's original.
  2. Reduce the heat, add the cream and then bring back to the boil until reduced by half and put to one side.
  3. Place finely chopped shallots, garlic and thyme leaves into a saucepan, add white wine and reduce until almost evaporated.
  4. Add fish cream sauce and bring to the boil, then reduce to a simmer until consistency and flavour is achieved. *This will yield average 150ml.
