Cod Fillet and Sundried Tomato Dressing - Seafoodie Range

Ingredients

  • 2 x 140g Cod fillet portions
  • 120g pouch of Sundried Tomato Dressing

Further ingredients required to make this recipe:

500g Cornish potatoes 160g green beans 60g grated parmesan cheese 50ml crème fraiche 20g butter

Method

1 Wash, peel and rewash the potatoes, cut to an even size, place in a pan and cover with water, adding a little salt. Place pan onto the stove and cook until the potatoes are completely tender. Drain off the water and then mash with a potato masher, adding the butter. When nice and smooth, add the crème fraiche and parmesan, stirring continuously with a spoon until a smooth creamy consistency is reached. Season to taste. 2. Prepare your green beans by removing the stalks with a sharp knife or scissors. You can cook these to tender, either by boiling in a pan of salted water or by steaming for a few minutes. 3 Set your grill to pre-heat on a medium high setting. Lightly oil and season your cod fillets with salt and pepper. Then place under the grill for about 8 minutes, if you are worried that the top is cooking too quickly, you should remove the fillets and place into your oven to cook through for the final few minutes. 4 To serve, spoon the parmesan mash tidily on to the plates and arrange the beans next to it. Carefully lift the grilled cod onto the plates and dress over and around, as desired, with the sundried tomato dressing. Bon appetit!
