Fish Batters

Lemonade Batter

This recipe takes the traditional batter and gives it a zesty twist by using cloudy lemonade in a crisp batter. The result is a subtle lemon flavoured batter that is sure to please ... just give it a try!

Fish Stock

Ingredients (Enough for 2-4 fillets)
80g Plain Flour
125ml Cloudy Lemonade
A pinch of Salt
Vegetable Oil, for deep-frying
40g Seasoned Flour


Method
1. Sift the flour and salt together into a medium bowl.
2. Make a well in the centre add the lemonade, and then whisk from the centre outwards until smooth. Allow the batter to stand for a few minutes in a cool place.
3. Place the seasoned flour onto a plate and roll the fillets of fish in it until covered well. Dip the fish into the batter and carefully add to the hot oil to deep-fry for 5-6 minutes, or until crisp and golden.
4. Carefully remove with a slotted spoon and drain on kitchen paper.

Beer Batter

Recipe for Beer Batter

Ingredients (Enough for 2-4 fillets)

125ml Real Ale (nutty and full bodied but not too dark)
A pinch of Salt
Vegetable Oil, for deep-frying
40g Seasoned Flour

Method

2. Make a well in the centre add the beer, and then whisk from the centre outwards until smooth. Allow the batter to stand for a few minutes in a cool place.
3. Place the seasoned flour onto a plate and roll the fillets of fish in it until covered well. Dip the fish into the batter and carefully add to the hot oil to deep-fry for 5-6 minutes, or until crisp and golden.
