INGREDIENTS FOR

g (cooking) chorizo, chopped

g granny smith apple, chopped

g shallot, chopped

g sugar

g apple juice

g parmesan, finely grated

x avocado
Coriander cress to garnish
Add the oil, chorizo, onions and apple to the pan on a medium heat.

Cook for a few minutes.

Add the sugar and apple juice.

Reduce until a jam consistency.

Blend the avocado for 30-40 seconds.

Grate the parmesan onto a baking sheet and microwave for 30 seconds.

Oil the scallops and season to taste.

Cook scallops in another pan until golden– approx 1-2 mins each side.

Serve in half shell with avocado puree and chorizo jam, and parmesan crisp.
