Poached Crab Claws & Salsa Salad

QUANTITIES BELOW ARE FOR 2 PEOPLE

1. Add 125g of butter, 30g Thyme, ½ a whole bulb of garlic and the zest and juice of 1 lemon

2. Melt the butter and aromats together

3. Arrange crab claws in a separate pan

4. Pour the butter sauce over the crab claws and warm through on a low heat

5. In a separate pan create the dressing by adding the zest and juice of 1 lemon, 25g of sugar, vegetable oil and whisk

6. Bring to the boil and remove after 30 secs

7. Add the avocado, tomato, and coriander into a bowl

8. Add 2tbsps of the dressing and season to taste

9. Arrange lettuce onto the plate

10. Spoon the salsa over the lettuce

11. Place the crab claws onto the salsa and serve
