ml white wine

ml double cream

x Lemon (zest and juice)

x tbsp oil
Put oil, butter, shallots and garlic into a pan and allow to sweat.

Add the mussels, then the white wine and cover.

Add the cream and parsley, then the zest and juice and cook for a further 2mins.

Serve with crusty bread.
