Buy a fantastic range of prawns from
Fish or Thought. 200 g of large peeled
prawns plus either a few cooked and
peeled tiger prawns or crevettes will
work well for this. You can adjust how
many you use depending on whether
this is a starter or main.
Iceberg lettuce and / or avocado.
Mayonnaise, tomato sauce, lemon,
black pepper and cayenne pepper.
1. Allow the prawns to defrost in the fridge. You can finish them off at room temperature.
2. To make the Marie Rose sauce use 4 tablespoons of mayonnaise and 4 tablespoons of tomato sauce. Add a good squeeze of lemon juice, a generous amount of black pepper and a little cayenne pepper (you can use a couple of drops of tabasco) for an added kick. Stir it all together and taste - you may need to add a little more salad cream or tomato sauce to get the mix right.
3. Mix the prawns in with the sauce.
4. Place shredded lettuce in the bottom of a bowl and add the prawns and sauce. Place the large prawns on top or to the side and serve.
