1. Shuck the oyster, preferably with an oyster knife. Only serve oysters that are firmly shut.
2. With the oyster in the cupped section of shell, pay out a tray with ice across it. You can use the ice we pack your delivery in. Place the oyster on the ice.
3. Add a squeeze of lemon, a little black pepper and one drop of tabasco into each oyster and place in the fridge for 15 minutes.
4. Serve with champagne or a lovely dry white wine.
