Gurnard is a beautiful looking fish sometimes referred to as angel fish. It remains very much underrated, making it good value, although prices have gone up as it has been discovered. We try and source larger fish, but a degree of flexibility in terms of size should be expected. The flesh is firm and quite sweet. Cook whole or as fillets, although as it quite a bony species we recommend you let us fillet it and remove the bones.
