James Knappett's Famous Lobster Dog Recipe
James Knappett is sous chef at two-Michelin-starred The Ledbury. Until recently he was Head Chef at Marcus Wareing at The Berkeley.
He spent two years at the renowned Per Se in New York before a long period at the world famous Noma.
x Cooked Lobster, (cooked)
x Jar mayonnaise (Hellman's)
x bunch dill
Cayenne pepper
x Small jar sundried tomatoes
x jar gherkins
x lemons
x packet of baby gem lettuce
x packet of hot dog buns
Cook and pick the lobsters, then cut into small bite-sized pieces when cool. Mix in a large bowl with the mayonnaise, lemon juice, chunkily-chopped sundried tomatoes, sliced gherkins, cayenne and chopped dill. This will be your bun filling.

Slice the buns, layer some chopped gem lettuce dressed in lemon juice and then a good layer of the filling. Serve immediately.
